At Xerox Research Centre Europe (XRCE), we have created part-of-speech
taggers for several languages, among them French. Please have a look at:

to try the tools and find links to the relevant documentation and articles.
We have also developped a robust parser for French. It produces shallow
parses (where boundaries are annotated) and labelled dependencies (SUBJ,
DOBJ, ADJ, etc.). Some relevant papers are listed below:
